This is a topic for recipes which require actual cooking skill. Feel free to add to it :). I'll start with my 5-minute cake recipe. It is excellent for Emergency Cake, when you need cake in a hurry.

5-minute Emergency Chocolate Cake
1) Get a mug that is good in the microwave. A glass or microwaveable plastic mug is best.
2) Put in
  • 4 tablespoons self-raising flour
  • 4 tablespoons sugar
  • 2 tablespoons cocoa powder (NOT hot chocolate powder!)
  • 2 tablespoons oil
  • 2 tablespoons water
  • a teeny splash of vanilla essence (if you have it)
3) Mix well.
4) Microwave on full power for 1.5 minutes, or until the cake has risen.
5) Put a scoop of ice cream on top and eat it.

World's quickest chocolate cake :D.

It's actually best with a shade under 2 tablespoons of oil and a shade over 2 tablespoons of water (e.g. 1¾ tablespoons of oil and 2¼ tablespoons of water), but the recipe is easier to remember this way.

This recipe also scales very well. As given, it's really enough for two. You can halve all the ingredients for one person, or if you are very hungry, use the quantities given above but with dessert spoons (10 ml) instead of tablespoons (15 ml).

The problem with using a normal earthenware or china mug is that these type of mugs contain water. When you microwave them, too much of the heat is absorbed by the mug, so the cake takes longer to cook and can burn on top before it's baked inside. Glass or microwave-safe plastic contains very little water, so does not get heated up much.

Variants:
Peanut Chocolate Cake
Replace the 2 tablespoons of oil with 2 tablespoons of peanut butter. Melt this in the microwave before adding the other ingredients. Any nut butter will do, so if you're allergic to peanuts, you can use cashew or soya nut butter.

Chocolate Orange Cake
Add ½ teaspoon of orange essence to the recipe, and slightly reduce the amount of oil. (Flavourings are stored in a sort of oil, so if you don't reduce the amount, the cake will be too greasy).

Chocolate Mint Cake
Add ½ teaspoon of peppermint essence to the recipe, and slightly reduce the amount of oil.
