I found a good prize was to breed a Pokemon that relates to the gym. For instance, challengers that beat me get a lead set up Aerodactyl with Earthquake, Rock Slide, Taunt and Stealth Rock.

Thing is it seems you are looking for an in-game team right now since you haven't finished the game yet. Thing is with in-game teams, so as long as you have type balance and high enough levels none of them are bad. It's when it gets to competitive battling that more factors come into play.
Jirachen, when you use mainly legendaries their natural power is usually as good as an EV'd Pokemon, so no wonder.
Anyway I think EV training is great, but this thread is a waste since there is already one open.
It's not so easy to just change H.P. though.
I agree that Double Team should go, because a lot of people play an evasion clause and you wouldn't be able to use Gliscor against them.
The key to such a team is to spread out your typings as best as possible. As such, I don't think you should have both Cacturne and Torterra. A steel type might be a good alternative. Magnezone might work nicely as it will have the element of surprise on such a team and will also work to counter...
