You could could go with one of the other villages, like grass or Waterfall which haven’t been explored much. Custom powers could be cool since those villages haven’t been seen too much, but byakugan is cool too. It’s ultimately up to you

Byakugan is so cool but got no love in Shippuden. Compared to the Sharingan which got like 50 power ups.

I thought of that but they're quite rare and generally, it would mean I'd need to be a member of Konohagakure or risk being hunted down for leaking the kekkei-genkai

Maybe that’s why they would go to a backwater village or one that’s not really known, to prevent being discovered. Like if one didn’t want to be in the uciha police force or the Anbu black ops for an example

not really. only two clans and danzo/kakashi. just they're so overused because one clan is like, THE BIGGEST CHARACTERS in the series. I mean there are others, but the reason we see them so far is cuz madara and all that stuff
